Soft Fluffy Cookie Recipe

Not to brag, but we think we've nailed the gluten-free cookie recipe! Aoife has been trialing different recipes and this one works the best for oat flour.

This recipe creates 8 delicious cookies!


Ingredients 

  • 1.5 cups The Merry Mill Oat Flour 

  • 1 cup butter 

  • 1 egg

  • 1/2 cup sugar of choice (we mixed coconut sugar and granulated sugar) 

  • 1 tsp baking soda

  • 1 tsp apple cider vinegar (trust us it works) 

  • 1/2 pinch of salt 

  • 2 tsp vanilla extract 

  • 200g choc chips (this one is up to you, we like to mix dark and milk chocolate)

Method 

  1. Preheat oven to 180oC

  2. Melt the butter in a saucepan (leave some chunks unmelted) 

  3. Mix the sugar, apple cider vinegar, and vanilla extract in a bowl to create a paste 

  4. Beat in an egg 

  5. Then slowly stir in butter 

  6. In another bowl mix dry ingredients (flour, baking soda, salt)

  7. Fold the dry ingredients into the wet ingredients

  8. Finally, add the chocolate chips

  9. Scoop tablespoon size amounts onto a baking tray 

  10. Bake for 8-10 mins
